Oatmeal Pancakes Switcheroo

Instant hot oatmeal using an instant hot water tap is a pretty quick and easy way to create breakfast. Do beware of fortified oatmeal, since the requirements for toddlers are different. I just get the house brand of oatmeal in the round paper container that costs $3, but often goes on sale. I put the oatmeal in a ceramic cereal bowl, add hot water, stir, and go up to get Bobo when he wakes up. By the time he is changed and is downstairs, the oatmeal is ready to eat. I just ask him what he wants in it. This morning, though, he asked for pancakes. What to do? Well, it turns out that adding an egg, some flour, and a teaspoon of baking powder to the oatmeal makes a nice pancake:





Bobo ate two and a quarter pancakes. I ate one as well, and they are good.
